St. Patrick's Day Cupcake with Hidden Gold

In two weeks, it will be St. Patrick's Day! (Tuesday March 17th) We better plan ahead for St. Patrick's dessert! Let's start with this spectacular Brownie cupcake with hidden gold! And what are those gold? They are edible gold sprinkles, and you can also replace them with other cool edible sweets too! It will be very fun to watch your guests discovering hidden treasure inside their St. Patrick's cupcakes!

Ingredients:

For the Brownie Cups:

  • ½ cup butter

  • 1 cup white sugar

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 1/3 cup unsweetened cocoa powder

  • ½ cup all-purpose flour

  • ¼ teaspoon salt

  • ¼ teaspoon baking powder

For the Frosting:

  • 1 /2 cup (1 stick) unsalted butter, softened

  • 3-4 cups powdered sugar

  • 1 tablespoon heavy cream or milk

  • 1 teaspoon vanilla or almond extract

  • green food coloring gel

  • gold Sprinkles, gold stars, or other edible gold decorations!

Direction:

  1. Grease mini muffin pan with butter or spray.

  2. Preheat oven to 375 degree F (190 C)

  3. In a bowl, melt only 1/2 cup of butter, using microwave or water bath.

  4. Add sugar, eggs, and vanilla. Mix until smooth

  5. In a separate bowl, combine flour, cocoa powder, salt, and baking powder

  6. Add the dry ingredients into wet ingredients. Mix just until combined. (Do not beat or overmix.)

  7. Scoop 2 teaspoon size amounts into muffin pan, and fill only half way full.

  8. Bake brownie cupcakes for 15-18 minutes. Or, check by inserting a toothpick in middle of cake and it comes out clean.

  9. Let the cake cool and remove each cake from the pan.

  10. Use a spoon to push down center of the brownie.

  11. Pour in gold sprinkles or decoration.

  12. For frosting: With a mixer, beat 1/2 cup of butter and 2 cups of powdered sugar until smooth. (Add sugar 1 cup at a time.)

  13. Add cream (or milk) and food coloring. Beat mixture for 2-3 minutes on medium until frosting becomes light and fluffy.

  14. Using a piping bag and tip, frost each brownie cupcake to hide gold sprinkles!

  15. It will be great to finish this sweet with a shamrock decoration!
