If you love the sweet excitement lava cakes give you, maybe you should try this molten lava cake with peanut butter! When digging into this cake, the mixture of brown peanut butter and dark chocolate will impress your guests.
200g dark chocolate, chopped
100g unsalted butter, chopped
2 egg yolks
1/2 cup (110g) caster (superfine) sugar
1/4 cip (35g) plain (all- purpose) flour, sifted
Cocoa, for dusting
Preheat oven to 200 degrees C (around 390 degree F).
Place chopped chocolate and butter in a saucepan over LOW HEAT and stir until the chocolate mixture is melted and smooth.
In another bowl, add the eggs, yolks and sugar and whisk until well combined.
Add the chocolate mixture and flour and whisk again.
Grease the molds really well to avoid sticking.
Spoon the mixture into the ramekins (dariole molds) until it fills only halfway.
Spoon 1 teaspoon (or more) of peanut butter right in the center of each chocolate mixture in the mold.
Fill the mold with chocolate mixture again until it fills about 80%-85% full. DON'T over- fill it because the cake will rise during baking.
Bake for 16- 18 minutes OR until the cake springs back when you touch the surface with your finger.
Gently turn the mold upside down to release the cakes immediately.
Dust with cocoa to serve and enjoy!
*The cake is best to be eaten right away because the center of cake will harden when putting in the fridge or leave it overnight.
